Ingredients
- 200 g JARLSBERG* Cheese, shaved with a vegetable peeler
- Fresh Mint Leaves, to serve
- 2 Eggplants, (700g)
- 50 g Baby Spinach Leaves, washed
- 2 Carrots, peeled & cut ino julienne strips
- 2 tblspns Lemon, juice
- 1 Orange, cut into fine quarters
- 2 tspn MASTERFOODS* Coriander, Ground
- 2 tspn MASTERFOODS* Cumin Seeds, Ground
- 500 g RAGULETTO* Napolitana Pasta Sauce
- 1 litre OCEAN SPRAY* Mango Cranberry Juice, chilled
- 75 g Flaked Almonds
- 1 tspn MASTERFOODS* Cracked Black Peppercorns
- 2 tblspns CRISCO* Canola Oil
- Crushed Ice
Cooking method
- Preheat oven to 180°C (160°C for fan-forced ovens). Lightly toast the flaked almonds on a baking tray for 3 minutes or until golden. Remove and set aside.
- Cut eggplant into 1cm thick slices. Brush lightly with oil. Sprinkle with combine coriander, cumin and pepper.
- Heat a large heavy based frying pan over a medium heat low heat. Add eggplant slices.
- Cook 3 to 4 minutes on each side or until tender and golden brown (sprinkle with lemon juice throughout the cooking time if the pan becomes too hot). Warm pasta sauce in a medium saucepan over a gentle heat.
- To serve, divide the fresh carrot and spinach between serving platters. Top with eggplant slices, cheese and sauce. Sprinkle with almonds. Serve immediately.
- To prepare the Minted Mango Cranberry Crush: place crushed ice in glass serving jug. Pour over the juice. Finish with orange pieces and mint leaves.
