Peach Muffins - Coles Baby Club

• Suitable for one year plus

Ingredients

• Olive oil
• 3 cups plain flour
• 1 tbsp baking powder
• 1/2 cup brown sugar
• 1/2 cup caster sugar
• 140g peaches, cooked and diced
• 1 cup milk
• 125g unsalted butter, melted
• 2 eggs, lightly beaten

Instructions

Preheat oven to 180°C and lightly oil two muffin pans. In a large bowl sift flour and baking powder, then add remaining ingredients.

Stir with a wooden spoon until well combined. Spoon mixture into muffin pans and bake for 20 to 25 minutes.

Allow to cool in pans for five minutes, then turn the muffins out onto a wire rack.

Sift flour and baking powder, beat eggs lightly with a fork.
