Tuna & Bean Salad

- 200g green beans, sliced
- 200g yellow beans, sliced
- 400g cannellini beans, drained, rinsed
- 100g rocket
- 1 small redd onion, finely sliced
- 1/2 cup (90g) small black olives
- 2 tablespoons baby capers
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 425g tuna in spring water, drained, flaked
- Blanch fresh beans in boiling water for 1 minute, until just tender. Drain and rinse immediately in cold water. Drain again.
- Combine blanched beans, cannellini beans, rocket, onion, olives and capers. Whisk together oil and juice. Combine with bean mixture. Top beans with tuna and season to taste.
