Tuna & Bean Salad

  • 200g green beans, sliced
  • 200g yellow beans, sliced
  • 400g cannellini beans, drained, rinsed
  • 100g rocket
  • 1 small redd onion, finely sliced
  • 1/2 cup (90g) small black olives
  • 2 tablespoons baby capers
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 425g tuna in spring water, drained, flaked

  1. Blanch fresh beans in boiling water for 1 minute, until just tender. Drain and rinse immediately in cold water. Drain again.
  2. Combine blanched beans, cannellini beans, rocket, onion, olives and capers. Whisk together oil and juice. Combine with bean mixture. Top beans with tuna and season to taste.
