Green apple and cucumber tzatziki

Ingredients

  • 2 Lebanese cucumbers, trimmed, coarsely grated
  • 2 Granny Smith apples, cored, coarsely grated
  • 1 garlic clove, crushed
  • 1 1/2 cups (420g) Greek-style yoghurt
  • 1/3 cup shredded mint
  • 1 Granny Smith apple, extra, chopped
  • 1 tbs olive oil
  • 1/2 tsp smoked paprika

Method

STEP 1

Combine the cucumber and grated apple in a medium bowl. Use your hands to squeeze out excess liquid. Discard liquid. Add the garlic, yoghurt and mint and stir to combine.

STEP 2

Spoon the tzatziki into a serving bowl. Top with the chopped apple and drizzle with the oil. Sprinkle with the paprika to serve.

Serve with mint sprigs and veggie sticks.
