How to buy and cook flathead

Fresh flathead fillets

Flathead fillets are sweet in flavour and flake easily when cooked.

This makes Flathead ideal for homemade fish and chips in a light and crispy batter.

100% of Coles’ fresh flathead is caught wild in Australian waters, mainly off the South Australian and Victorian coasts.

Buying tips

  • When buying flathead fillets look for yellowish-white flesh with no brown markings (dark veins may be visible).
  • Flesh should be firm, moist and lustrous, with a pleasant, fresh sea smell.

Storage tips

  • Fresh flathead fillets should be stored in the fridge in either an airtight container or well wrapped on a plate or tray. Cook and eat within 3 days of purchase.
  • Freeze on day of purchase for up to 3 months below -18°C. Ensure the fish does not come in direct contact with ice to avoid freezer burn. Defrost in the fridge overnight and ensure it’s fully thawed before cooking.

Cooking tips

  • Flathead is best suited to cooking methods that maintain moisture such as poaching, steaming or baking.
  • When grilling or barbecuing, it is best to use a marinade to lock in moisture and avoid it drying out. A simple marinade can be made by combining a lime juice, chopped coriander, garlic, a little olive oil and a good pinch of salt and pepper.
