15-minute turkey san choy bow
Dinner is effortless thanks to this 5-ingredient recipe, ready in just 15 minutes. This turkey san choy bow is crunchy, flavoursome and fresh - tick, tick, tick!
You will need turkey mince, microwavable black rice, iceberg lettuce, Thai-style dressing and a carrot. To have this tasty meal on the table in 15 minutes.
To start, heat a non-stick frying pan over high heat. Add the turkey mince and cook, stirring, for 5 minutes or until the mince has changed colour and is cooked through. Meanwhile, heat the microwavable black rice in the microwave for 90 seconds following the packet directions. Feel free to swap the black rice for any variety of microwave rice, or try it with red quinoa instead.
To separate the lettuce leaves, trim the base and run the head of lettuce under cold water. The leaves will fill with water and separate easily. Drain off the water and place the lettuce cups on a serving plate. Now add the rice to the mince with some Thai Style Lime and Chilli Dressing.
Mix it well so you get that zesty flavour all through the mince mixture. To cut the carrot either use a julienne peeler to get the long thin shavings or thinly slice the carrot and then slice into long thin strands. Spoon the mince mixture into the lettuce cups and top with carrot for extra freshness and crunch.
Drizzle over more of the dressing to serve. Whip up this 15-minute turkey san choy bow for a quick and tasty family meal.
