Ingredients

  • 400g dark chocolate, chopped
  • 150ml freshly brewed espresso coffee
  • 600ml thickened cream
  • Whipped cream, extra, to serve
  • Finely grated chocolate, to serve

Method

  1. Step 1

    Combine the chocolate and coffee in a heatproof bowl over a saucepan of simmering water (don’t let the bowl touch the water). Stir with a metal spoon for 5 mins or until smooth. Set aside for 2 mins to cool.
  2. Step 2

    Use an electric mixer to whisk the cream in a large bowl until firm peaks form. Add one-quarter of the cream to the chocolate mixture and fold to combine. Add the remaining cream, in batches, folding until combined. Divide among 6 serving glasses and chill for 2 hours to set.
  3. Step 3

    Top mousse with extra whipped cream and sprinkle with finely grated chocolate to serve.
