Ingredients

  • 340g pkt Coles Asia Thick Egg Noodles
  • 600g Coles RSPCA Approved Australian Chicken Breast Fillets, thinly sliced
  • 400g pkt Coles Kitchen Family Stir Fry Mix
  • 500g Coles Satay Simmer Sauce
  • 1 bunch coriander, leaves picked

Method

STEP 1

Cook the noodles following packet directions or until tender. Drain well.

STEP 2

Meanwhile, heat a greased wok or large frying pan over high heat. Add one-third of the chicken and stir-fry for 2-3 mins or until golden brown and cooked through. Transfer to a bowl. Repeat, in 2 more batches, with the remaining chicken.

STEP 3

Return the chicken to the wok or pan with the stir-fry mix, satay sauce and noodles. Stir-fry for 3-4 mins or until heated through. Add half the coriander and toss to combine.

STEP 4

Divide chicken mixture among serving bowls. Sprinkle with the remaining coriander to serve.
