Put a summery spin on crowd-pleasing almond slice. It's simple to make and bursting with fruity flavour.

Almond and summer fruit slice cut into small pieces

Ingredients

  • 250g butter, softened
  • 1 cup (220g) caster sugar
  • 2 eggs, lightly whisked
  • 2 cups (240g) almond meal
  • 1/2 cup (75g) plain flour
  • 439g can Dole Fruit Mix in Syrup or 432g can Dole Fruit Mix in Juice
  • 1 tbs cornflour
  • 2 tbs flaked almonds
  • Icing sugar, to dust

Method

  1. Step 1

    Preheat oven to 180°C. Grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, allowing the sides to overhang. Use an electric mixer to beat the butter and sugar in a bowl until pale and creamy. Add the egg and beat until well combined. Stir in the almond meal and flour. Spoon into the prepared pan and smooth the surface.
  2. Step 2

    Drain fruit mix, reserving syrup or juice. Place fruit mix in a bowl with the cornflour and toss to coat. Spoon the fruit mixture evenly over the almond meal mixture in the pan. Sprinkle with flaked almond. Bake for 1 hour or until golden.
  3. Step 3

    Place the reserved syrup or juice in a saucepan over high heat. Bring to the boil. Reduce heat to low. Simmer for 2-3 mins or until liquid reduces by half. Drizzle over the warm slice in the pan. Cool. Dust with icing sugar. Cut into pieces.
