Anzac biscuits

Ingredients

  • 125g butter, chopped
  • 2 tbs golden syrup
  • 1/2 tsp bicarbonate of soda
  • 2 tbs boiling water
  • 1 1/2 cups (135g) rolled oats
  • 1 cup (150g) plain flour
  • 1 cup (220g) caster sugar
  • 1 cup (80g) desiccated coconut

Method

  1. Step 1

    Preheat oven to 180°C and line 2 baking trays with baking paper.Combine the butter and golden syrup in a medium saucepan over low heat. Cook, stirring, for 2 mins or until the butter melts and the mixture is smooth. Remove from heat.
  2. Step 2

    Combine the bicarbonate of soda and boiling water in a small bowl. Add to the butter mixture and stir to combine. Transfer to a large bowl. Add oats, flour, sugar and coconut and stir to combine.
  3. Step 3

    Roll 1-tbs portions of the mixture into balls and place on the lined trays, allowing room for spreading. Flatten the balls slightly.
  4. Step 4

    Bake, swapping the trays halfway through cooking, for 12-15 mins or until golden brown. Cool completely.
