Asian-style beef omelette
Dinner is sorted with this 5-ingredient Asian-style beef omelette. Filled with mince and veggies, this quick recipe is a winner.
- 1 bunch coriander
- 500g Coles Australian No Hormones 4 Star Beef Mince
- 2 tsp Chinese five spice
- 400g pkt Coles Kitchen Ready to Stir-Fry Family Mix
- 8 Coles Australian Free Range Eggs, lightly whisked
Chop the stems and half the coriander leaves, reserving remaining leaves. Heat a wok or large frying pan over high heat. Spray with olive oil spray. Add the mince, five spice and coriander stem and stir-fry for 5 mins or until cooked through. Transfer to a large bowl. Cover to keep warm.
Add the vegetables to the wok or pan. Stir-fry for 2 mins. Add the chopped coriander leaves and stir-fry for 1 min. Transfer to the bowl with the mince and stir to combine. Cover to keep warm.
Wipe the wok or pan clean. Heat over medium heat. Spray with olive oil spray. Pour one-quarter of the egg into the wok or pan. Swirl to coat the base. Cook for 1 min or until almost set. Transfer to a plate. Repeat with remaining egg.
Divide the mince mixture and reserved coriander leaves among omelettes to serve.
