Bacon-wrapped chorizo with capsicum mayo

Enjoy these delicious bacon and chorizo bites dipped in a homemade capsicum mayonnaise.

Ingredients

  • 2 x 360g pkts Coles Chorizo in Blankets
  • 1/2 x 330g jar roasted peppers (capsicum), drained, chopped
  • 1 garlic clove, crushed
  • 2/3 cup (200g) whole-egg mayonnaise
  • 2 tbs chopped basil

Method

STEP 1

Cook the chorizo following packet directions.

STEP 2

Meanwhile, place the capsicum in a food processor and process until smooth. Add the garlic, mayonnaise and basil and process until smooth.

STEP 3

Place chorizo on a serving platter and serve with the capsicum mayo.

More ways to dip: we love these mini sausages with our creamy capsicum mayo but, to save even more time, you can serve them with bought tomato relish, mango chutney or fig jam.
