Baked banana sundaes
Put a twist on classic campfire desserts with these toasty baked banana sundaes.

Ingredients
- 4 large bananas
- 8 white marshmallows, chopped
- 1/4 cup (45g) dark choc chips
- Coles Cranberry & White Chocolate Trail Mix, to serve
- Caramel sauce, to serve
Method
STEP 1
Prepare a camp fire. Use a small sharp knife to cut about one-third off the side of each banana. Remove skin and chop the flesh from banana sides.
STEP 2
Scoop out a little more flesh from each banana and chop. Place in a bowl with the marshmallow and choc chips. Toss to combine. Top each banana with marshmallow mixture. Wrap in 2 sheets of baking paper and 2 sheets of foil.
STEP 3
Place over hot embers. Cook for 10 mins or until the marshmallow melts and the banana is heated through.
STEP 4
Sprinkle banana mixture with trail mix and drizzle with caramel sauce. Serve immediately.
Make it at home
Bake the bananas in the oven at 220°C for 8 mins or until the marshmallow melts. Unwrap and bake for a further 2 mins or until the marshmallow is golden.

Freeze overripe bananas in a container, with or without their peel, until you have two or three and can make banana cake.
