This easy baked pork katsu makes a delicious weeknight dinner. Served with rice salad and drizzled with tonkatsu sauce, it will be a new favourite.

Ingredients

  • 2 Coles Pork Schnitzels Plain Crumb
  • 2 x 250g pkts Coles 7 Ancient Grains microwavable rice
  • 500g pkt Birds Eye Thai Stir Fry Vegetables
  • Coles 97% Fat Free Mayonnaise, to serve
  • Tonkatsu sauce, to serve

Method

  1. Step 1

    Preheat oven to 180°C and line a large baking tray with baking paper. Place schnitzels on the lined tray and bake for 15 mins or until cooked through.
  2. Step 2

    Meanwhile, heat the rice following packet directions. Spray a large frying pan with olive oil spray and place over medium-high heat. Add the vegetables and stir-fry for 5 mins or just until heated through. Cool slightly.
  3. Step 3

    Thinly slice the schnitzels. Divide among serving plates with the rice and vegetables. Season. Drizzle the schnitzels with mayonnaise and tonkatsu sauce to serve.

    Boost it: Baking schnitzels in the oven gives you delicious, golden results without the need for oil. You could also cook them with no oil in an air fryer.
