Balsamic berry meringue
Layered with mascarpone and a delicious balsamic berry mixture, this meringue recipe is an easy and delicious way to celebrate any occasion.

Ingredients
- 250g strawberries, quartered
- 125g raspberries
- 1/4 cup (35g) dried cranberries
- 1/4 cup (40g) icing sugar mixture
- 2 tbs balsamic vinegar
- 2 tsp vanilla bean paste
- 250g mascarpone
- 300ml thickened cream
- 1 tsp vanilla bean paste, extra
- 2 x large Coles Make at Home Meringue Nests
- Mint leaves, to serve
Method
STEP 1
Combine the strawberries, raspberries, cranberries, icing sugar, vinegar and vanilla in a large bowl. Set aside for 1 hour or until the strawberries release their juices.
STEP 2
Use an electric mixer to whisk the mascarpone, cream and extra vanilla in a bowl until soft peaks form.
STEP 3
Place 1 meringue nest on a serving plate. Top with half the cream mixture and one-third of the berry mixture. Top with the remaining meringue nest, cream mixture and berry mixture. Drizzle with berry juices and sprinkle with mint.
