Ingredients

  • 550g loaf Coles Banana Bread, cut into slices
  • 50g butter, softened
  • 1/2 cup (160g) strawberry jam
  • 250g strawberries, halved
  • 5 Coles Australian Free Range Eggs, lightly whisked
  • 1 cup (250ml) thickened cream
  • 3/4 cup (185ml) milk
  • 2 tbs caster sugar
  • 1 tsp vanilla bean paste
  • 1 tsp cinnamon sugar

Method

  1. Step 1

    Preheat oven to 150°C. Grease an 8-cup (2L) baking dish. Spread each slice of banana bread with butter, then spread with strawberry jam. Cut in half diagonally. Arrange the banana bread and half the strawberry in the prepared dish.
  2. Step 2

    Whisk the egg, cream, milk, sugar, vanilla and cinnamon sugar in a jug. Pour evenly over the banana bread and set aside for 10 mins to soak.
  3. Step 3

    Place the dish in a roasting pan. Pour enough boiling water into the pan to come halfway up sides of the dish. Bake for 1 hour or until the custard is just set.
  4. Step 4

    Sprinkle the remaining strawberry over the pudding to serve.
