Use this simple pasta dough recipe to make perfect sheets of fresh pasta. Perfect for homemade fettuccine or ravioli, it will bring out the delicious flavours in your pasta creations.

  • 2 cups (300g) plain flour
  • 1 tsp salt
  • 3 extra large Coles Australian Free Range Eggs
  • Plain flour, extra, to dust

Method

  1. Step 1

    Combine the flour and salt on a clean work surface or in a large bowl. Make a well in the centre. Add the eggs and whisk to combine, slowly incorporating the flour into the egg mixture.
  2. Step 2

    Continue to gradually draw flour into the egg mixture until a dough forms. (Alternatively, place flour and salt in a food processor. Add eggs and pulse until mixture resembles coarse breadcrumbs.) Turn the dough onto a lightly floured surface and knead for 5-7 mins or until smooth and elastic. Cover dough with plastic wrap and set aside for 30 mins to rest.
  3. Step 3

    Use a large sharp knife to cut dough into 4 portions. Cover each portion with plastic wrap or a damp tea towel.
  4. Step 4

    Secure a pasta machine to the side of a clean work surface. Set the rollers to the widest setting. Shape 1 dough portion into a flat 6cm x 8cm rectangle. Lightly dust with flour and roll the dough through the machine.
  5. Step 5

    Dust dough with a little extra flour. Fold ends of the dough into the centre to make a smaller rectangle. Roll through the machine again. Repeat 6 more times.
  6. Step 6

    Reduce roller setting on the pasta machine by 1 notch and roll the dough through. Continue reducing the setting on the pasta machine and rolling until you reach number 7 (or the third-last setting) and the pasta dough is about 2-3mm thick. Place the pasta sheet on a clean work surface dusted with flour. Repeat with the remaining portions of dough.
