Eight BBQ chicken skewers with green salsa

Ingredients

  • 8 Coles RSPCA Approved Australian Chicken Thigh Fillets, cut into 2cm pieces
  • 1 red capsicum, seeded, cut into 2cm pieces
  • 1 yellow capsicum, seeded, cut into 2cm pieces
  • 1 green capsicum, seeded, cut into 2cm pieces
  • 1 red onion, cut into 2cm pieces
  • 2 tbs lemon juice
  • 1 tbs extra virgin olive oil
  • 2 tsp smoked paprika

Green salsa

  • 1 green capsicum, seeded, finely chopped
  • 1/2 red onion, finely chopped
  • 1 tbs finely chopped flat-leaf parsley
  • 1 tbs finely chopped coriander
  • 2 tbs red wine vinegar
  • 1 green chilli, seeded, finely chopped (optional)

Method

  1. Step 1

    Thread the chicken, combined capsicum and onion onto metal or soaked bamboo skewers. Combine the lemon juice, oil and paprika in a large shallow glass or ceramic dish. Add the skewers and turn to coat. Season. Cover with plastic wrap. Place in the fridge for 30 mins to develop the flavours.
  2. Step 2

    Heat a barbecue grill or chargrill on medium-high. Cook skewers, turning, for 15 mins or until vegetables are tender and chicken is cooked through.
  3. Step 3

    Meanwhile, to make the green salsa, combine the capsicum, onion, parsley, coriander, vinegar and chilli, if using, in a small bowl. Season.
  4. Step 4

    Arrange the skewers on a large serving platter. Serve with the salsa.
