BBQ chicken skewers with green salsa
Ramp up the flavour of your weekend barbie with these smoky chicken skewers. Paired with a tasty green salsa, they’re sure to be a hit.

Ingredients
- 8 Coles RSPCA Approved Australian Chicken Thigh Fillets, cut into 2cm pieces
- 1 red capsicum, seeded, cut into 2cm pieces
- 1 yellow capsicum, seeded, cut into 2cm pieces
- 1 green capsicum, seeded, cut into 2cm pieces
- 1 red onion, cut into 2cm pieces
- 2 tbs lemon juice
- 1 tbs extra virgin olive oil
- 2 tsp smoked paprika
Green salsa
- 1 small green capsicum, seeded, finely chopped
- 1/2 small red onion, finely chopped
- 1 tbs finely chopped flat-leaf parsley
- 1 tbs finely chopped coriander
- 2 tbs red wine vinegar
- 1 long green chilli, seeded, finely chopped (optional)
Method
STEP 1
Thread the chicken, combined capsicum and onion onto metal or soaked bamboo skewers. Combine the lemon juice, oil and paprika in a large shallow glass or ceramic dish. Add the skewers and turn to coat. Season. Cover with plastic wrap. Place in the fridge for 30 mins to develop the flavours.
STEP 2
Heat a barbecue grill or chargrill on medium-high. Cook skewers, turning, for 15 mins or until vegetables are tender and chicken is cooked through.
STEP 3
Meanwhile, to make the green salsa, combine the capsicum, onion, parsley, coriander, vinegar and chilli, if using, in a small bowl. Season.
STEP 4
Arrange the skewers on a large serving platter. Serve with the salsa.
