BBQ pork with pineapple salsa
Quick and easy, this BBQ pork is the perfect family feed. It’s paired with a fresh salsa loaded with pineapple, onion and mint.

Ingredients
- 4 Coles Australian Pork Forequarter Chops
- 3 tsp ground paprika
- 2 tsp fennel seeds
- 1/3 cup (80ml) olive oil
- 250g pineapple, peeled, finely chopped
- 1/3 cup roasted peppers (capsicum), drained, finely chopped
- 1 red onion, finely chopped
- 1/4 cup mint leaves
Method
STEP 1
Heat a barbecue grill or chargrill on medium-high. Place the pork on a plate. Combine the paprika, fennel and half the oil in a small bowl. Rub the spice mixture evenly over the pork. Cook for 3 mins each side or until just cooked through. Transfer to a clean plate and set aside for 5 mins to rest.
STEP 2
Meanwhile, combine the pineapple, capsicum, onion, mint and remaining oil in a medium bowl.
STEP 3
Divide the pork among serving plates. Serve with the pineapple mixture.
