Ingredients

  • 4 Coles Australian Pork Forequarter Chops
  • 3 tsp ground paprika
  • 2 tsp fennel seeds
  • 1/3 cup (80ml) olive oil
  • 250g pineapple, peeled, finely chopped
  • 1/3 cup roasted peppers (capsicum), drained, finely chopped
  • 1 red onion, finely chopped
  • 1/4 cup mint leaves

Method

  1. Step 1

    Heat a barbecue grill or chargrill on medium-high. Place the pork on a plate. Combine the paprika, fennel and half the oil in a small bowl. Rub the spice mixture evenly over the pork. Cook for 3 mins each side or until just cooked through. Transfer to a clean plate and set aside for 5 mins to rest.
  2. Step 2

    Meanwhile, combine the pineapple, capsicum, onion, mint and remaining oil in a medium bowl.
  3. Step 3

    Divide the pork among serving plates. Serve with the pineapple mixture.
