Ingredients

  • 500g Coles Australian No Added Hormones Beef 5 Star Mince
  • 3/4 cup (50g) breadcrumbs (made from day-old wholegrain bread)
  • 2 tsp ground cumin
  • 2 garlic cloves, crushed
  • 1 Coles Australian Free Range Egg, lightly whisked
  • 2 tbs olive oil
  • 350g pkt Coles Broccoslaw Kit
  • 1 cup (160g) drained mixed marinated olives
  • 250g cherry tomatoes, halved
  • 4 pieces wholemeal pita bread, quartered
  • 220g tzatziki dip

Method

  1. Step 1

    Combine the mince, breadcrumbs, cumin, garlic and egg in a large bowl. Season. Roll 1-tbs portions of the mince mixture into balls and place on a plate. Use your hands to flatten slightly.
  2. Step 2

    Heat the oil in a large frying pan over medium heat. Add the meatballs and cook, turning occasionally, for 10 mins or until browned and cooked through. Transfer to a clean plate lined with a paper towel to cool slightly.
  3. Step 3

    Just before serving, prepare salad kit in a medium bowl following packet directions. Add olives and tomato to the salad. Toss to combine. Divide the pita evenly among serving plates. Top with salad mixture and meatballs. Spoon over the tzatziki.

Recipe tip

Cook the meatballs up to 2 days ahead, cool and store in an airtight container in the fridge. Make the salad mixture just before serving.
