Beef pies with mash and peas

Try this easy beef pot pie recipe this weekend for a hearty meal. Serve them with peas and creamy mash for a classic pub favourite at home.

Ingredients

  • 750g pkt Coles Made Easy Slow Cooked Beef Ragu In Tomato Sauce
  • 2 tsp olive oil
  • 1 brown onion, finely chopped
  • 2 x 200g pkts Coles Australian Sliced White Mushrooms
  • 1 sheet frozen puff pastry, just thawed, quartered
  • 1 Coles Australian Free Range Egg, lightly whisked
  • 350g tub Coles Kitchen Crème Royale Mashed Potato
  • 250g frozen peas, heated

Method

STEP 1

Preheat oven to 200°C. Pour the beef and sauce from the packet into a bowl. Pull the meat apart to separate. 

STEP 2

Heat the oil in a large saucepan over medium heat. Add the onion and cook, stirring, for 3 mins or until the onion softens. Stir in the mushroom and cook, stirring, for 5 mins or until tender. Stir in the beef and sauce.

STEP 3

Divide the beef mixture among four 1-cup (250ml) ovenproof ramekins. 

STEP 4

Top with the pastry squares to enclose the filling. Use a small sharp knife to lightly score the pastry and brush with a little egg. Place the ramekins on a baking tray and bake for 20-25 mins or until the pastry is golden and puffed.

STEP 5

Meanwhile, heat the mashed potato following packet directions.

STEP 6

Serve the pies with mashed potato and peas.
