Ingredients

  • 600g Coles Australian Gravy Beef, cut into 3cm pieces
  • 1 brown onion, coarsely chopped
  • 1/2 cup (150g) vindaloo paste
  • 400g can diced tomatoes
  • 1 sweet potato, peeled, coarsely chopped

Method

  1. Step 1

    Heat a large non-stick casserole pan over medium-high heat. Cook the beef, in 3 batches, turning occasionally, for 3 mins or until brown all over. Transfer to a bowl. Add the onion to the pan and cook, stirring, for 5 mins or until onion softens. Add the curry paste and cook, stirring, for 1 min or until aromatic.
  2. Step 2

    Return the beef to the pan with the tomato and 1 cup (250ml) water. Bring to the boil. Cover and reduce heat to low. Cook, covered, stirring occasionally, for 1 hour 40 mins.
  3. Step 3

    Add the sweet potato and cook, covered, for 20 mins or until the beef is tender and sweet potato is cooked through. Season.

    Serve with sliced red chilli and mint leaves.
