Beetroot and orange salad

This vibrant vegetarian salad is great for any occasion. You can serve it as a side, appetiser, light meal or lunch.





  • 1 pkt Coles Australian Rainbow Beetroot*, trimmed
  • 1 red onion, thinly sliced
  • 2 oranges, peeled, cut into wedges
  • 100g fetta, crumbled
  • Dill sprigs, to serve
  • Orange zest, to serve
  • 1 tsp Coles Wholegrain Mustard
  • 1 tbs honey
  • 2 tbs sherry vinegar
  • 1/4 cup (60ml) olive oil
  • Sliced sourdough baguette, to serve



Place the beetroot in a microwave-safe dish with ¼ cup (60ml) water. Cover and cook in the microwave for 10-12 mins or until tender. Cool slightly, then peel and thinly slice. Arrange beetroot on a serving platter with the onion, orange, fetta. Sprinkle with dill and orange zest. 


Place the mustard, honey, vinegar and oil in a screw-top jar. Shake until well combined. Drizzle dressing over the salad. Serve immediately with sourdough.
