Ingredients

  • 2 cups (300g) self-raising flour
  • 3/4 cup (165g) brown sugar
  • 2 large overripe bananas, mashed
  • 2 Coles Australian Free Range Eggs
  • 1/2 cup (125ml) canola oil
  • 1/2 cup (125ml) buttermilk
  • Bananas, extra, halved lengthways, to decorate

Method

  1. Step 1

    Preheat oven to 180°C. Line a 10cm x 22cm loaf pan with baking paper, allowing the sides to overhang.
  2. Step 2

    Combine the flour and sugar in a large bowl. Whisk the mashed banana, eggs, oil and buttermilk in a large jug. Add to the flour mixture and stir to combine. Spoon into prepared pan and smooth surface. Top with halved banana.
  3. Step 3

    Bake for 1 hour or until a skewer inserted in the centre comes out clean. Set aside in the pan for 5 mins before transferring to a wire rack to cool completely. Cut into slices to serve.
