Blackberry and lime mojitos

Ingredients

  • 250g fresh blackberries
  • 2 limes, sliced
  • 1/3 cup (75g) caster sugar
  • 4 mint sprigs
  • 1 cup (250ml) white rum
  • 1/4 cup (60ml) elderflower
  • Crushed ice, to serve
  • Chilled soda water, to serve
  • Blackberry skewers, to serve

Method

  1. Step 1

    Place the blackberries, lime, sugar and half the mint in a medium bowl. Use the end of a rolling pin to crush blackberries and lime. Stir in the rum and cordial.
  2. Step 2

    Pour the mixture evenly among serving glasses. Add remaining mint and ice and top up with soda water. Serve with blackberry skewers.
