Blackberry star anise and rose sangria with mint sprigs

Ingredients

  • 1 cup (150g) frozen blueberries
  • 3 whole star anise
  • 1 tsp vanilla bean paste
  • 1 cup (220g) caster sugar
  • 3 cups crushed ice
  • 750ml btl rosé wine, chilled
  • Mint sprigs, to serve
  • Frozen blackberries, extra, to serve

Method

  1. Step 1

    Place the blackberries, star anise, vanilla, sugar and 1/3 cup (80ml) water in a small saucepan over medium heat. Bring to a simmer. Cook, stirring occasionally, for 5 mins. Set aside to cool slightly. Transfer to a bowl. Place in the fridge for 1 hour or until chilled.
  2. Step 2

    Divide ice evenly among serving glasses. Strain the blackberry mixture into a jug. Add the rosé. Stir to combine. Pour evenly among the glasses. Top with mint sprigs and extra blackberries.
