Blackberry, star anise and rosé sangria
Serve up this delicious sangria at your next get-together. It’s bursting with fresh fruity flavour.

Ingredients
- 1 cup (150g) frozen blueberries
- 3 whole star anise
- 1 tsp vanilla bean paste
- 1 cup (220g) caster sugar
- 3 cups crushed ice
- 750ml btl rosé wine, chilled
- Mint sprigs, to serve
- Frozen blackberries, extra, to serve
Method
STEP 1
Place the blackberries, star anise, vanilla, sugar and 1/3 cup (80ml) water in a small saucepan over medium heat. Bring to a simmer. Cook, stirring occasionally, for 5 mins. Set aside to cool slightly. Transfer to a bowl. Place in the fridge for 1 hour or until chilled.
STEP 2
Divide ice evenly among serving glasses. Strain the blackberry mixture into a jug. Add the rosé. Stir to combine. Pour evenly among the glasses. Top with mint sprigs and extra blackberries.
