Butter chicken raita

Dive into a bowl of rich butter chicken and basmati rice for a satisfying winter warmer. It’s served with a cooling cucumber raita for added freshness.

Ingredients

  • 2 x 400g pkts Coles Finest Butter Chicken
  • 2 x 250g pkts microwavable basmati rice
  • 1/2 cup (140g) Greek-style yoghurt
  • 1 Lebanese cucumber, halved crossways
  • 250g pkt Coles Plain Naan

Method

STEP 1 

Heat the butter chicken following packet directions.

STEP 2 

Heat the rice following packet directions.

STEP 3

Coarsely grate half the cucumber. Thinly slice the remaining cucumber and reserve. Combine the yoghurt and grated cucumber in a small bowl. Season.

STEP 4 

Meanwhile, heat a non-stick frying pan over medium heat. Cook the naan bread, in batches, for 1 min each side or until golden and heated through.

STEP 5 

Divide the butter chicken and rice among serving bowls. Top with yoghurt mixture. Serve with remaining cucumber and naan bread. Season.
