Buttery green beans with bacon and almonds

These buttery green beans are an irresistible side. Complete with bacon, slivered almonds and dried cranberries, this is a must-try dish for any celebration.

Ingredients

  • 500g green beans, trimmed
  • 30g butter, chopped
  • 2 bacon rashers, finely chopped
  • 2 tbs slivered almonds, toasted
  • 1 tbs dried cranberries
  • 1 tbs sherry vinegar

Method

STEP 1

Cook the beans in a large saucepan of boiling water for 5 mins or until bright green and tender. Drain well.

STEP 2

Meanwhile, melt the butter in a large frying pan over high heat until foaming. Add the bacon and cook, stirring, for 2 mins or until crisp. Add the almonds, cranberries and vinegar and cook for 1-2 mins or until well combined.

STEP 3

Add the beans to the bacon mixture and cook, tossing, for 1-2 mins or until well combined. Season. Transfer to a serving platter. Serve immediately.
