Three capsicum eggs-in-a-hole

Ingredients

  • 1 1/2 tsp olive oil
  • Four 2cm-thick crossways capsicum slices (use different colours if desired)
  • 4 extra-large Coles Australian Free Range Eggs

Method

  1. Step 1

    Preheat oven to 200°C (180°C fan-forced).
  2. Step 2

    Heat the oil in a large non-stick ovenproof frying pan over medium heat. Add the capsicum and cook for 3 mins or until browned in spots.
  3. Step 3

    Remove the pan from heat. Turn capsicum over and gently crack an egg into the centre of each capsicum ring. Break the egg yolks if desired. Transfer pan to the oven and cook for 6-8 mins or until egg whites have set and egg yolks are slightly runny (cook for longer if firmer egg yolks are desired).
