Caramelised brussels sprouts with bacon

Ingredients
- 500g brussels sprouts, ends trimmed
- 2 tbs brown sugar
- 2 tbs orange marmalade
- 3 streaky bacon rashers, coarsely chopped
- 1/3 cup (45g) hazelnuts, toasted, coarsely chopped
Method
STEP 1
Preheat oven to 200°C. Line a large baking tray with baking paper. Combine brussels sprouts, sugar and marmalade in a large bowl. Season. Arrange evenly over the lined tray. Roast, turning occasionally, for 40 mins or until brussels sprouts are tender and caramelised.
STEP 2
Meanwhile, cook the bacon in a medium frying pan over medium heat for 5 mins or until crisp. Transfer to a plate lined with paper towel.
STEP 3
Place the brussels sprout mixture in a serving bowl. Sprinkle with the bacon and hazelnut to serve.
Serve with flat-leaf parsley leaves.
Swap me: For a meat-free side, omit the bacon and sprinkle with pomegranate seeds.
Nut know-how: For the best flavour, toast hazelnuts on a baking tray at 180°C for 10 mins, then rub off any skins with a clean tea towel before chopping.
