Carrot, orange and cashew salad
This vibrant salad is loaded with carrot, orange, cashews, sultanas and more. It makes the perfect addition to any main.

Ingredients
- 120g pkt Coles Australian 4 Leaf Salad
- 3 oranges, peeled, segmented, juice reserved
- 3 large carrots, peeled, cut into ribbons
- 2 spring onions, thinly sliced diagonally
- 1/4 cup (40g) sultanas, coarsely chopped
- 2 tbs olive oil
- 2 tsp honey
- 2 tsp Dijon mustard
- 1/4 cup (40g) honey-roasted cashews, coarsely chopped
- 2 tbs thyme leaves
Method
STEP 1
Place the salad leaves on a serving platter. Arrange the orange segments on top. Roll up the carrot ribbons and add to the salad. Sprinkle with the spring onion and sultana.
STEP 2
Place the oil, honey, mustard and reserved orange juice in a screw-top jar. Season. Seal and shake well to combine. Drizzle dressing over salad. Sprinkle with the cashew and thyme.
