Cauliflower steaks with spinach and chickpeas
These easy cauliflower steaks make a quick meat-free meal. Served with tzatziki and mint, this dish is a delicious way to enjoy more veggies.

Ingredients
- 2 small purple cauliflowers
- 420g can chickpeas
- 120g pkt Coles Australian Baby Spinach
- 1/2 cup (140g) Coles Tzatziki
- 1/3 cup mint leaves
Method
STEP 1
Cut the cauliflowers into steaks. Heat a greased chargrill on medium-high. Cook the cauliflower steaks for 5 mins each side or until lightly charred and tender.
STEP 2
Meanwhile, drain the chickpeas, reserving 2 tbs liquid. Cook chickpeas in a greased frying pan over high heat for 5 mins or until lightly browned. Add the spinach. Cook for 2 mins or until the spinach wilts.
STEP 3
Combine the tzatziki and reserved chickpea liquid in a bowl. Season. Serve the cauliflower steaks with the chickpea mixture, tzatziki sauce and mint.
