Chargrilled miso salmon with broccoli rice

Enjoy some midweek seafood with this quick miso salmon dish. Served with broccoli rice, it’s a weeknight winner.

Ingredients

  • 4 Coles Australian Salmon Portions Skin Off
  • 1/3 cup (80ml) miso & sesame vinaigrette
  • 1 large head broccoli, chopped
  • 2 x 250g pkts Coles Microwave Brown Rice & Quinoa
  • 2 tbs wasabi mayonnaise

Method

STEP 1

Heat a chargrill on medium-high. Spray the salmon with olive oil spray. Cook, brushing with vinaigrette, for 2 mins each side for medium or until cooked to your liking. Season.

STEP 2

Place the broccoli in a food processor and process until finely chopped. Cook broccoli in a saucepan of boiling water for 2 mins or until heated through. Drain well.

STEP 3

Heat the rice following packet directions. Combine rice and broccoli in a bowl. Divide among serving plates. Top with the salmon and spoon over any pan juices. Drizzle with mayonnaise to serve.
