Charred baby gem salad with tahini dressing

Ingredients

  • 1/3 cup (95g) Coles Greek Style Natural Yoghurt
  • 2 tbs lemon juice
  • 1 tbs tahini
  • 6 Coles Australian Baby Gem Lettuce, ends trimmed, cut into quarters lengthways
  • 60g pkt Coles Australian Baby Rocket
  • 150g marinated goat’s cheese, drained
  • 2 tbs pistachio dukkah
  • Lemon zest, to serve

Method

STEP 1

Whisk yoghurt, lemon juice, tahini and 1 tbs warm water in a small bowl. 

STEP 2

Heat a barbecue grill or chargrill on high. Spray the cut sides of the lettuce with olive oil spray. Cook on the grill for 1 min each side or until lightly charred. Transfer to a serving platter.

STEP 3

Top the lettuce with rocket and goat’s cheese. Drizzle with the tahini dressing and sprinkle with dukkah and lemon zest to serve.
