Cheat’s choc-cherry pavlova stack

Blow your guests away this Christmas with a stunning pavlova stack. It’s easy to do and tastes every bit as good as it looks.

Ingredients

  • 500g cream cheese, softened
  • 1/3 cup (75g) caster sugar
  • 200g dark chocolate, melted
  • 300ml thickened cream
  • 3 Coles Meringue Nests
  • Cherries, to serve
  • Mixed berries, to serve

Poached cherries

  • 500g cherries, pitted
  • 1/2 cup (110g) caster sugar
  • 1/2 cup (125ml) cherry brandy
  • 1 cinnamon stick
  • 2 whole star anise

Method

  1. Step 1

    To make the poached cherries, combine cherries, sugar, brandy or orange juice, cinnamon and star anise in a saucepan over medium heat. Cook, stirring occasionally, for 5-7 mins or until sugar dissolves and cherries are just tender. Use a slotted spoon to transfer cherries to a heatproof bowl. Bring syrup in the pan to the boil. Cook for 5 mins or until syrup thickens slightly. Set aside to cool.
  2. Step 2

    Use an electric mixer to beat the cream cheese and sugar in a bowl until well combined. Add the chocolate and beat until just combined. Add the cream and beat until soft peaks form.
  3. Step 3

    Place 1 meringue nest on a serving plate. Spoon over one-third of the cream mixture and top with half the poached cherries. Drizzle with a little syrup. Repeat layering with remaining meringue nests, cream mixture, poached cherries and syrup. Decorate with cherries and berries to serve.

    Serve withchocolate curls and icing sugar.
