Roasted lamb dish with vegetables, peas and tomato chutney

Ingredients

  • 400g pkt Coles Australian Baby Potatoes with Parsley & Butter
  • 400g pkt Coles Australian Broccoli, Cauliflower, Pumpkin & Sweet Potato or a 500g pkt Coles Roasting Vegetables with Garlic and Rosemary
  • 8 Coles Australian Lamb Loin Chops
  • 1 cup (120g) frozen peas
  • 1/3 cup (80g) tomato chutney

Method

  1. Step 1

    Preheat oven to 200°C. Grease a large baking tray. Pierce the lid of the potato packet twice. Microwave on high for 5 mins. Place on the tray with the vegetable mixture. Roast for 20 mins or until tender and golden.
  2. Step 2

    Meanwhile, heat a large frying pan over medium-high heat. Spray the lamb with oil. Cook in batches for 3-4 mins each side or until browned and cooked to your liking. Transfer to a plate and cover with foil. Set aside for 5 mins to rest
  3. Step 3

    Place the peas in a microwave-safe dish. Cover and cook in microwave for 2 mins or until heated through.
  4. Step 4

    Serve the lamb, roasted vegetables and peas with tomato chutney.
