Cheat’s lamb roast
For a shortcut roast that’s ready in no time, give this easy lamb dinner a go.
- 400g pkt Coles Australian Baby Potatoes with Parsley & Butter
- 400g pkt Coles Australian Broccoli, Cauliflower, Pumpkin & Sweet Potato or a 500g pkt Coles Roasting Vegetables with Garlic and Rosemary
- 8 Coles Australian Lamb Loin Chops
- 1 cup (120g) frozen peas
- 1/3 cup (80g) tomato chutney
Preheat oven to 200°C. Grease a large baking tray. Pierce the lid of the potato packet twice. Microwave on high for 5 mins. Place on the tray with the vegetable mixture. Roast for 20 mins or until tender and golden.
Meanwhile, heat a large frying pan over medium-high heat. Spray the lamb with oil. Cook in batches for 3-4 mins each side or until browned and cooked to your liking. Transfer to a plate and cover with foil. Set aside for 5 mins to rest
Place the peas in a microwave-safe dish. Cover and cook in microwave for 2 mins or until heated through.
Serve the lamb, roasted vegetables and peas with tomato chutney.
