Cheesy broccoli and bacon bake

This easy bake is the ultimate side dish. With cheesy broccoli and golden bacon bits, it’s a winner.

Ingredients

  • 2 bacon rashers, finely chopped
  • 50g butter
  • 1/4 cup (35g) plain flour
  • 2 cups (500ml) milk
  • 1/4 cup (20g) finely grated parmesan
  • 3/4 cup (90g) coarsely grated tasty cheddar
  • 2 heads broccoli, cut into florets

Method

STEP 1

Heat a medium saucepan over medium-high heat. Add the bacon and cook, stirring, for 3 mins or until bacon is golden brown. Use a slotted spoon to transfer to a plate.

STEP 2

Reduce heat to medium. Add the butter to the pan. Cook until the butter melts and is bubbling. Add the flour and cook, stirring, for 1 min or until the mixture is grainy. Add the milk and cook, stirring with a balloon whisk, until the mixture is smooth. Continue cooking, stirring constantly with a wooden spoon, for 2-3 mins or until the mixture boils and thickens. Remove from heat. Add the parmesan and 1/2 cup (60g) cheddar and stir to combine. Season.

STEP 3

Preheat grill on high. Cook broccoli in a large saucepan of boiling water for 3-4 mins or until tender. Drain.

STEP 4

Place the broccoli in a baking dish and pour over the cheese sauce. Sprinkle evenly with the bacon and remaining cheddar. Cook under the grill for 4-5 mins or until golden brown. Season.
