Cheesy broccoli bake with chopped bacon rashers

Ingredients

  • 2 heads broccoli, cut into florets
  • 1/2 x 490g jar three-cheese pasta sauce
  • 1/2 cup (60g) coarsely grated tasty cheddar
  • 2 bacon rashers, finely chopped
  • 2 spring onions, thinly sliced
  • Flat-leaf parsley leaves, to serve

Method

  1. Step 1

    Preheat oven to 200°C. Cook the broccoli in a large saucepan of boiling water for 1 min or until bright green and just tender. Drain well.
  2. Step 2

    Transfer the broccoli to a large baking dish. Spoon over the pasta sauce and sprinkle with cheddar. Bake for 15-20 mins or until cheddar melts and mixture is heated through.
  3. Step 3

    Meanwhile, add the bacon to a medium frying pan over high heat. Cook, stirring, for 2 mins or until golden brown. Use a slotted spoon to transfer to a plate lined with paper towel.
  4. Step 4

    Sprinkle the bacon, spring onion and parsley over the broccoli mixture in the dish. Serve immediately.
