Chicago-style deep dish pizza

Ingredients

  • 300g pkt (2 pack) 24cm thick pizza bases
  • 1 tbs olive oil
  • 1 red onion, finely chopped
  • 1 small red capsicum, coarsely chopped
  • 1 small yellow or green capsicum, coarsely chopped
  • 500g Coles Thick Pork Sausages
  • 1 cup (100g) coarsely grated mozzarella
  • 2/3 cup (190g) Leggo’s Squeeze Pizza Sauce Garlic, Onion & Herbs
  • Finely grated parmesan, to serve
  • Basil leaves, to serve

Method

  1. Step 1

    Preheat oven to 220°C. Lightly grease two 23cm springform pans. Press the pizza bases into prepared pans, cutting to fit if necessary (see tip).
  2. Step 2

    Heat oil in a frying pan over medium heat. Cook onion and combined capsicum, stirring, for 5 mins or until the vegetables soften. Set aside to cool slightly.
  3. Step 3

    Remove sausages from casings and break into small pieces. Use a fork to gently spread out over the pizza bases. Top with capsicum mixture, then with mozzarella. Drop dollops of sauce over the top, and use the back of a spoon to gently spread.
  4. Step 4

    Bake for 15 mins or until bases are golden brown and sausage is cooked through. Season. Top with parmesan and basil.

    Michael’s tip deep-dish pizzas are cooked in springform pans. If your bases are slightly oval trim each end, then press into the pan to fit.
