Chicken and nectarine noodle salad

Ingredients

  • 180g dried soba noodles
  • 450g pkt frozen vegetable mix
  • 4 yellow nectarines, stoned, cut into wedges
  • 1 roast chicken, meat shredded
  • 1/4 cup (60ml) Asian-style dressing

Method

  1. Step 1

    Cook the noodles in a saucepan of boiling water following packet directions. Refresh under cold water. Drain well. Place in a large bowl.
  2. Step 2

    Meanwhile, cook vegetables in the microwave following packet directions.
  3. Step 3

    Place the vegetables, chicken or turkey, nectarine or peaches, and noodles on a serving platter. Drizzle with dressing. Season to serve.
