Chicken and nectarine noodle salad
Bursting with sweet flavour, this chicken and nectarine noodle salad is perfect for busy evenings. It’s ready to be enjoyed in just 20 minutes.
- 180g dried soba noodles
- 450g pkt Birds Eye Steam Fresh Bean, Broccoli & Sugar Snap Pea Mix
- 1 Coles Hot Roast Chicken, skin and bones removed, meat shredded
- 4 yellow nectarines, stoned, cut into wedges
- 1/4 cup (60ml) Marion’s Kitchen Miso & Sesame Dressing
Cook the noodles in a saucepan of boiling water following packet directions. Refresh under cold water. Drain well. Place in a large bowl.
Meanwhile, cook vegetables in the microwave following packet directions.
Place the vegetables, chicken, nectarine and noodles on a serving platter. Drizzle with dressing. Season to serve.
