Chicken, apple and lettuce salad

This refreshing poached chicken and apple salad is bursting with delicious flavour. Perfect for the warm weather, it’s a must-try for your next picnic or get-together.



Note: + 1 hour chilling time



  • 2 Coles RSPCA Approved Australian Chicken Breast Fillets
  • 1 iceberg lettuce, cut into small wedges
  • 1 small red onion, thinly sliced
  • 1 Granny Smith apple, thinly sliced
  • ½ cup (55g) chopped walnuts
  • 2 tsp Coles Hemp Seeds
  • ⅓ cup (80ml) lemon juice
  • 1 tbs Dijon mustard
  • Lemon wedges, to serve



Fill a medium heavy-based saucepan with water. Place over high heat and bring to a simmer. Add the chicken and reduce heat to low. Cook for 10 mins or until the chicken is just cooked through. Transfer the chicken to a plate. Place in the fridge for 1 hour to chill. 


Use 2 forks to shred the chicken. Arrange the lettuce, onion, apple and chicken on a serving platter. Sprinkle with walnuts and hemp seeds.


Whisk the lemon juice and mustard in a jug until smooth and well combined. Season with pepper. Drizzle over the salad and serve with lemon wedges.
