Chickpea and tomato loaded hommus
Dive into this cheat’s loaded hommus, complete with roasted chickpeas and tomatoes for maximum flavour. Easy and delicious, it's the perfect vegetarian appetiser for Christmas festivities.
- 2 tbs olive oil
- 400g can chickpeas, rinsed, drained
- 2 tsp Middle Eastern Harissa spice mix
- 250g vine-ripened cherry tomatoes
- 200g Coles Hommus Dip
- 1 tbs Greek-style yoghurt
- 35g pkt Gourmet Garden Harissa Finishing Drizzle
Preheat oven to 180°C. Line a baking tray with baking paper. Place the oil, chickpeas and spice mix in a small bowl and toss to coat. Spread over the lined tray. Bake for 20 mins or until golden. Add the tomatoes to the tray and bake for a further 10 mins or until tomatoes soften.
Spread the hommus over a large serving platter. Top with the chickpeas and tomatoes. Drizzle with the yoghurt and harissa and serve immediately.
Serve with: flat-leaf parsley leaves, mint leaves and toasted sliced Coles Bakery Pane di Casa Baguette
