Chocolate apple cake
With just 10 minutes prep time needed, this impressive chocolate apple cake is an easy, fuss-free dessert. Rich and moist, it’s delicious served with whipped cream or natural yoghurt.

Ingredients
- 2 KANZI® apples
- 3/4 cup (165g) brown sugar
- 125g butter, softened
- 1 tsp vanilla extract
- 2 eggs
- 3/4 cup (110g) self-raising flour
- 1/2 cup (60g) almond meal
- 1/2 tsp bicarbonate of soda
- 2 tbs cocoa powder
- 1 tbs apricot jam, warmed
- Whipped cream or natural yoghurt, to serve
Method
STEP 1
Preheat oven to 180°C. Grease a 20cm (base measurement) round cake pan and line base and side with baking paper. Coarsely grate 1 KANZI® apple. Thinly slice the remaining KANZI® apple.
STEP 2
Use an electric mixer to beat the sugar, butter and vanilla in a large bowl until light and fluffy. Add the eggs, 1 at a time, beating well after each addition. Add flour, almond meal, bicarbonate of soda, cocoa powder and grated KANZI® apple and fold to combine.
STEP 3
Spoon into the prepared pan and smooth the surface. Arrange KANZI® apple slices over the top, pressing down gently. Bake for 50 mins or until a skewer inserted in the centre comes out clean. Set aside for 5 mins before transferring to a plate. Brush the top with jam. Serve warm or at room temperature with cream or yoghurt.
