Cook 400g of pasta in a large saucepan of boiling water following packet directions or until al dente. Drain well.
Meanwhile, heat one tsp of olive oil in a large frying pan over medium heat.
Add 100g of Coles Short Cut Bacon, ham or prosciutto and cook, stirring, for four minutes or until light golden.
Add one chopped garlic clove and cook, stirring, for 30 sec or until aromatic.
Add 300ml of cream or evaporated milk, one cup of frozen peas or mixed vegetables and two cups of shredded roast chicken.
Sprinkle with another two tablespoons of grated hard cheese and some chopped chives or spring onion to serve.
