This creamy chicken and bacon pasta is ready to eat in just 20 minutes. Full of flavour, it’s a great go-to when you’re short on time.

Ingredients

  • 400g pasta
  • 1 tsp olive oil
  • 100g Coles Short Cut Bacon, sliced
  • 1 garlic clove, finely chopped
  • 300ml light thickened cream or evaporated milk or cream
  • 1 cup (120g) frozen peas
  • 2 cups (320g) shredded Coles RSPCA Approved Hot Roast Chicken Breast
  • 1/3 cup (25g) finely grated hard cheese

Method

  1. Step 1

    Cook 400g of pasta in a large saucepan of boiling water following packet directions or until al dente. Drain well.

  2. Step 2

    Meanwhile, heat one tsp of olive oil in a large frying pan over medium heat. 

  3. Step 3

    Add 100g of Coles Short Cut Bacon, ham or prosciutto and cook, stirring, for four minutes or until light golden. 

  4. Step 4

    Add one chopped garlic clove and cook, stirring, for 30 sec or until aromatic. 

  5. Step 5

    Add 300ml of cream or evaporated milk, one cup of frozen peas or mixed vegetables and two cups of shredded roast chicken.

  6. Step 6

    Sprinkle with another two tablespoons of grated hard cheese and some chopped chives or spring onion to serve.

Ingredient tip:
You can substitute bacon for ham or prosciutto. You can also substitute thickened cream for evaporated cream or cream.
