Creamy mushroom gnocchi
Impress the family with a bowl of hearty comfort food tonight. This tasty combination of gnocchi and creamy mushroom sauce only takes 15 minutes to whip up.
- 400g mixed mushrooms (such as cup, brown or shiitake), thinly sliced
- 120g Coles Australian Kale & Baby Spinach
- 300ml thickened cream
- 1 tbs wholegrain mustard
- 500g pkt Coles Potato Gnocchi
Spray a non-stick frying pan with olive oil spray. Heat over high heat. Add the mushroom and cook, stirring occasionally, for 5 mins or until the mushroom begins to brown. Add the kale and spinach, cream and mustard and cook, stirring, for 2-3 mins or until the spinach just wilts.
Meanwhile, cook the gnocchi in a saucepan of boiling water following packet directions. Drain well.
Add the gnocchi to the mushroom mixture in the pan and carefully toss to combine. Season.
Divide the gnocchi mixture evenly among serving bowls.
