Creamy zucchini and edamame pasta
Creamy and delicious, this zucchini and edamame pasta is the perfect home-cooked meal after a busy day.

Ingredients
- 375g Coles Spirals Pasta
- 2 zucchini, thinly sliced crossways
- 400g frozen edamame, thawed, peeled
- 300ml light cream
- 1 lemon, zested
Method
STEP 1
Cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain.
STEP 2
Meanwhile, spray a large non-stick frying pan with olive oil spray and heat over high heat. Add the zucchini and cook, stirring, for 5 mins or until tender. Stir in the edamame and cream. Bring to the boil. Remove from heat.
STEP 3
Add pasta to the zucchini mixture and stir until combined and heated through. Divide pasta mixture among serving bowls. Season. Top with lemon zest to serve.

Juice the lemon after zesting and freeze the juice for another recipe, or cut into wedges and squeeze over the pasta.
