Curried chicken pizza

Ingredients

  • 500g Coles RSPCA Approved Australian Chicken Tenderloins, coarsely chopped
  • 500g jar Coles Sri Lankan Style Jaffna Curry by Dani Venn
  • 2 x 250g pkts Coles Plain Naan
  • 200g tub Coles Dairy Tzatziki Dip
  • 120g pkt Coles Australian Baby Spinach

Method

STEP 1 

Preheat oven to 200°C. Line 2 large baking trays with baking paper. Spray a frying pan with olive oil spray and place over medium-high heat. Add the chicken and cook for 2 mins each side or until cooked through. Add the curry sauce and reduce heat to medium-low.  Simmer for 5 mins.

STEP 2 

Divide the naan breads between the lined trays. Top with the chicken mixture. Bake for 10 mins or until the edges of the naan breads are crisp.

STEP 3 

Combine the tzatziki with 2 tbs water in a small bowl and season. Top the naan pizzas with spinach. Season with pepper and serve with the tzatziki mixture.
