DIY pickles

Ingredients

  • 5 Lebanese cucumbers, thinly sliced
  • 1 tbs salt
  • 1 cup (220g) caster sugar
  • 1 cup (250ml) apple cider vinegar
  • 1 tsp mustard seeds

Method

STEP 1

Combine the cucumber, salt, sugar, vinegar and mustard seeds in a 4-cup (1L) sterilised jar. Place in the fridge overnight to develop the flavours. Store in the fridge for up to 1 week.
