Easy apple pies

Ingredients

  • 2 Pink Lady apples, peeled reserving apple skin, cored, cut into 24 wedges
  • 3 tsp caster sugar
  • 1 tsp lemon juice
  • Pink food colouring, to tint (optional)
  • 3 sheets frozen puff pastry, just thawed
  • 2 tbs apricot jam
  • 1 Coles Australian Free Range Egg yolk, lightly whisked

Method

  1. Step 1

    Preheat oven to 200°C. Line a large baking tray with baking paper. Combine the apple wedges, apple skin and sugar in a bowl. Cover and cook in the microwave for 1 1/2 mins or until apple wedges begin to soften. Set aside to cool. Discard the apple skin. Combine the lemon juice and food colouring, if using, in a small bowl. Add to the apple mixture and stir to combine.
  2. Step 2

    Place pastry on a clean work surface. Use a 7cm heart-shaped pastry cutter or knife to cut out shapes, reserving excess pastry. Use a small sharp knife to cut the bottom of the heart shapes to make the bottom of the apple. Cut apple stems from the reserved pastry.
  3. Step 3

    Place half the pastry shapes on the lined tray. Place pastry stems on top and press gently to attach. Use a fork to poke a few holes in the pastry and brush with a little jam. Top each piece of pastry on the lined tray with 3 apple wedges, trimming to fit if necessary. Brush a little egg yolk along the edges of the pastry.
  4. Step 4

    Use a small sharp knife to cut vertical slits on the remaining pastry shapes. Arrange over the apple mixture and use a fork to press along the edge to enclose filling. Brush the pies with a little egg.
  5. Step 5

    Bake the pies for 18-20 mins or until light golden. Set aside to cool slightly.
