Easy chicken and strawberry salad

Add some colour to your plate with this chicken and strawberry salad. It's a quick and easy dinner option.

Ingredients

  • 750g Coles RSPCA Approved Australian Chicken Breast Fillets
  • 240g Coles Australian Baby Spinach & Rocket
  • 250g strawberries, halved
  • 2 medium avocados, stoned, peeled, sliced
  • 1/3 cup (80ml) balsamic vinegar

Method

STEP 1

Heat a chargrill on medium. Spray chicken with olive oil spray. Cook for 5 mins each side or until cooked through. Transfer to a plate and cover with foil. Rest for 5 mins.

STEP 2

Divide the spinach and rocket, strawberry and avocado among serving plates. Thinly slice the chicken and arrange over the salad.

STEP 3

Drizzle salad with balsamic vinegar. Season with pepper to serve.
